From The Little Book of Hygge, here is an elderflower cordial recipe that harkens back to the wonderful smell of childhood summers in Denmark.
- 30 Elderflower clusters
- 3 large lemons
- 6 cups water
- 8 cups sugar
- Wash elderflower clusters well and place them in a large bowl
- Scrub the lemons under hot water, slice them, and add them to the clusters in the bowl
- Bring water to a boil and add the sugar
- Pour hot water into the bowl containing the elderflowers and lemons.
- Cover the bowl with a lid and let it rest for three days.
- Strain the liquid and pour into bottles. Store in the fridge.
MakesĀ 10.5 cups of elderflower lemonade. Serves 10-12.”
